Preheat oven to 350°F.
Combine first 6 ingredients; pour into an oven safe baking dish. Top with nuts. Place in oven and bake for 30 minutes until bubbly and golden. Remove from oven; garnish with fresh parsley, if desired, and serve hot with crackers and fresh vegetables for dipping.
Alternative options:
Hot Crab dip - omit green onions, rosemary, and pecans. Add 1 cup crab meat and 1 tsp hot sauce of choice. Top with crumbled crackers and bake according to instructions.
Blue Walnut dip - Same as for crab but add 1/2 cup blue cheese crumbles instead of crab meat and Montery Jack; instead of cheddar, top with a generous layer of chopped walnuts. Serve with apple and pear slices.
Spinach Onion - Add 2 cups chopped cooked spinach to basic recipe.
Kale Dip - same as for spinach but with kale.
Artichoke Dip - Omit rosemary and substitute mozzarella for the cheddar; add 1 can drained chopped artichokes.
